From South Australia, this Sauvignon Blanc is characterised by a fruit weighted and textural palate. Only free run juice was used for this wine and the slow, cool ferments achieved the preservation of the intense aromas and varietal flavours. This balanced beautifully by a refreshing natural acidity. Subtle passionfruit and lemon curd carry the palate through to a fresh basil on the finish. The acid lingers for a persistence of flavour with brilliant clarity and a green tint. Best paired with garlic prawns, fresh oysters or spicy Thai food.
